The process of organic viticulture has all the elements of nature. The wind is important during the process of ecological viticulture, as it helps the vineyard to the proliferation of the fauna and flora that coexist and help the natural protection of the vine.

The elaboration has been carried out using the traditional champenoise method of secondary fermentation in the bottle, in addition to the rigorous precepts of the Kosher certification.
