Elaboration
The elaboration of this organic Xarel-lo Red still wine was specially thought to celebrate International Women’s Day. The grapes come from a single vineyard in Avinyonet del Penedès and we harvest them on 30/08/2023.
Each grape was selected one by one and only the best of each vine was harvested. The grapes were collected in 20 kg boxes and we left them in a cold chamber to cool the grapes.
We then destemmed the grapes and carried out a maceration with the skins for a few hours to obtain the organoleptic characteristics of the Xarel-lo Rojo.

Once we had the free-run juice, we drained it statically and the clean must fermented at a temperature of 16°C (61°F). It was aged on mothers, passed the winter cold and on January 12 of this year we bottled, corked and labeled it manually.
This wine is a unique and limited edition and we have bottled 447 bottles.
Tasting
This wine expresses the distinct characteristics of Red Xarel-lo, golden yellow in color with copper reflections on the nose with aromas of apricots, talcum powder and melon, fresh on the palate, the fruit continues on the palate and has a long and persistent finish.
Pairing
This is a very gastronomic wine, ideal to accompany all kinds of dishes where fish is the protagonist. Rice dishes, Asian cuisine, soft cheeses, pasta and white meats. It is also highly recommended as an aperitif. Serve between 8 and 10 °C.
