In Covides we have a new incorporation, the new vermouth within the Duc de Foix range.
Elaboration
The Duc de Foix vermouth begins first in Covides with the elaboration of a white wine specially designed to be the base of the vermouth. Subsequently, all the ingredients for its elaboration are added to the vermouth production plant: white sugar, caramel and a unique maceration of aromatic plants that give it its characteristic aroma and flavor.
Tasting notes
It presents a dark amber color with reddish reflections, with a bright and clean appearance.
On the nose, notes of roots, gentian and angelica stand out, as well as hints of orange, cinnamon and Mediterranean plants.
The palate presents a complex structure, where sweet aromas of elderberry, citrus and spices intertwine with drier sensations of cinchona, doncell and gentian. Bitterness is present, structuring the balance between sweetness and acidity. The finish is persistent, warm, semi-sweet and tonic.
In short, it is a vermouth that responds perfectly to the qualification of aperitif, being complex on the nose and very long on the palate.
